In 1994 the Victoria, Sergei, and Valya Boutenko experienced an intense decline in their health. After switching to a healthful way of eating, they were able to regain vibrant health. Since that time the Boutenko's have been dedicated to helping people around the globe learn about natural healing and nutrition.

CHICKEN CURRY STIR-FRY & LENTILS
4 Servings. 30 Minutes
(278 Calories, 6 g. Saturated Fat, 26 g. Protein, 5 g. Fiber)

1/2 cup Lentils
4 cups Water; divided
1 tsp. Sea Salt
1 cup Brown Rice
2 tbsp. Solid Coconut Oil
1 Onion; chopped
1 cup Cauliflower; chopped
2 tsp. Curry Powder
1 pound Boneless Skinless Chicken Breast; diced

PREP:

1. Combine lentils, 2 cups water, & salt in a medium saucepan over medium-high heat. Bring to a boil then reduce heat to low, cover and simmer for 20 minutes.

2. Place brown rice and remaining 2 cups water in a microwave-safe bowl. Cover & cook according to package directions, between 15-20 minutes.

3. Meanwhile, heat a skillet or wok over high heat. Add 1 tbsp. coconut oil to skillet and allow it to melt. Add onion & cauliflower and cook, stirring constantly, for 2 minutes. Add 1/2 tsp. curry powder and stir. Cook 1 minute longer then remove mixture from pan and set aside.

4. Add remaining oil to skillet, allow to melt, then add chicken and cook for 2 minutes. Add the remaining curry powder and toss well to combine. Return the onion & cauliflower mixture to the skillet and cook 1 minute longer or until heated through. Serve chicken stir-fry immediately over the steamed brown rice with the side of lentils. latest graduation wears chic style
